docs: update graphics to ensure naming is consistent (#11643)

Some graphics used in the docs are using the wrong naming for specific
terms

# How the Problems Are Solved

Replaced graphics with updated terms:
- Role Assignment instead of User Grant, Authorization
- Project Grant instead of Organization Grant
