feat: Refactor GraphQL resolvers to extract domain methods into separate files and retain only shared helpers

- Add package documentation mapping resolver files to domains (subscriber/usage/billing/mutations/esim/alerts/subscriptions)
- Remove models package import and add blank imports for context/base64 to preserve helper function dependencies
- Remove all resolver method implementations (Subscriber/SubscriberByImsi/Subscribers/SubscriberAccount/UsageEvents/UsageStats/RealTimeUsage/Invoices/Invoice

refactor: Replace interface{} with any alias and optimize string formatting with fmt.Appendf
...
- Replace map[string]interface{} with map[string]any in GraphQL, metrics, payment gateway, and webhook handlers
- Replace []byte(fmt.Sprintf()) with fmt.Appendf(nil, ...) for cursor encoding in GraphQL resolvers and tests
- Replace strings.HasPrefix/TrimPrefix with strings.CutPrefix for webhook signature parsing
- Replace stripe.Int64/Bool with new() constructor for Stripe payment parameters

- Add encodeCursor/decodeCursor tests for base64 cursor encoding/decoding with valid and invalid inputs
- Add buildUsageFilterWhere tests for empty filters, usage type filtering, and cost range filtering
- Add ResolverRoot method tests to verify Query/Mutation/Subscription return receiver
- Include helper function implementations (encodeCursor, decodeCursor, buildUsageFilterWhere)
